Peppermint Fudge Without the Guilt

If you are anything like me you LOVE the holidays! Holiday treats are one of my favorite parts of the season. When it comes to my health and wellness journey, the biggest challenge I have is finding ways to curb my sweet tooth without ruining my goals. So how do I go about this? Find healthier ways to make some of my favorite sweets.

Fudge is a classic holiday dessert, and because I love adding the Christmas twist, adding peppermint to the mix seems natural. So I scoured the internet, Pinterest and my favorite Instagram ladies and basing off of this Wholefully recipe.

So healthy is a very broad term. This isn’t a low calorie option, but there is no dairy, healthy fats, and a more natural source of sugar. I have been trying to add healthier fats to my diet so this is a great solution. Coconut oil has been found to boost the immune system, improve memory and brain function, improve digestion, prevents gum disease, and helps balance hormones. Also cocoa has antioxidant benefits, improves brain health, and helps to lower the LDL cholesterol and glucose levels.

So what do you need?

  • Coconut Oil, ½ cup

  • Cocoa powder unsweetened, ½ cup

  • Honey, ¼ cup

  • Vanilla Extract, ¼ tsp

  • Peppermint Extract, ¼ tsp

  • Pinch of Salt

  • Parchment paper

How do we make it?

  1. First start off melting the coconut oil until it is a liquid, for me this was 30 seconds in the microwave.

  2. Whisk in the cocoa powder, honey, vanilla extract, peppermint extract, and salt.

  3. When you add the honey, it may harden the oil, so I put it back in the microwave for another ten seconds.

  4. Line a small container, I used a food storage container, with parchment paper and add the mixture to the container.

  5. Place in the refrigerator to cool or if you want it to harden faster in the freezer. Cut it into the size pieces you want (this recipe was divided into 9 pieces) and store in the fridge.
