Kale, Apple, and Quinoa Salad

One of my key tips to eating healthy throughout the week is taking time to meal prep! I typically take time over the weekend because that's when I can put a few hours aside. Salads are one of my favorite ways to do that because there are so many things you can do with it! During one of my Pinterest strolls (yes I have a problem), I ran across one that looked absolutely delicious from Cooking Classy's blog. I will put the link at the end of the post, but I made a few change. It was so simple to make, but it did take some time.

Ingredients (salad):

1 bunch/6 ups kale, remove the ribs and chop

1/2 cup dry quinoa (whichever kind you like)

2 gala apples, cored and chopped

1/2 cup dried cranberries, roughly chopped

1/2 cup pecans (I used pecans because its what I had in my pantry)

4 oz goat cheese

Cook the quinoa as per directions on the packaging, and get started making sure all of your produce is washed. Let the quinoa completely cool once it has completed cooking. Add your kale to a large bowl and start making your salad dressing.

Ingredients (salad dressing):

1/2 cup olive oil

1/4 cup fresh lemon juice (about 1/2 a lemon)

2 Tbsp honey

1 1/2 tsp dijon mustard

To make the salad dressing just add all these ingredients to a smaller bowl and whisk together. Once this is made pour 3/4 of it onto your kale and toss to evenly coat the kale. Cover the bowl and place it in the fridge for 15 minutes.

While the kale is cooling would be the perfect time to core and chop your apples. If you are not planning to serve the whole salad I recommend using a lemon-water mix to dip the apple pieces in to help prevent browning. Once the apples are chopped, chop the pecans if needed.

After the kale has cooled add the apples, pecans, cranberries and goat cheese. Toss the salad and serve. Use the additional dressing as needed. If you plan on using this salad for a couple of meals, cover and store in the fridge.
